Meal Idea: Chicken & Spinach Alfredo Casserole



Note: please forgive me for my lack of measurements, as I am usually stepping into the kitchen freestyle and just taste and test until I get it to where I want it, Yet as I grow this blog, I will make it a point to offer exact or approximate measurements for you! I promise!

Here is a super simple meal idea for those nights that you feel like whipping up something quick but tasty! If you are not a fan of chicken, then you can also try substituting the chicken with some baked shrimp seasoned the same way as you would the chicken below.



Ingredients I used:

Large Macaroni Noodles,cooked & salted
Chopped Spinach
Fresh Whole Wheat Bread Crumbs
Olive Oil
Mozzarella Cheese

For The Alfredo Sauce:
1 Block of Cream Cheese
Olive Oil
Crushed Basil
Dried Oregano
Salt to taste
Hot Water or Cream (I used water)
Garlic Powder
Black Pepper
Dash of Sugar

For The Chicken Breast:
Olive Oil
Salt
Crushed Basil
Garlic Powder
Dried Oregano
Black Pepper


Directions:
Simply combine your noodles, chopped spinach, cooked chicken and sauce into a casserole dish. Stir until well combined & sprinkle mozzarella on top. Top with fresh bread crumbs and drizzle with a bit of olive oil on top. bake until fresh bread crumbs are golden brown and crisp. Garnish with a fresh sprig of parsley. Serve with a nice red whine or iced tea!
